Mango Milkshake:

Mangoes are very tasty tropical fruits. If mangoes are not in season, you can substitute canned mango pulp. Canned pulp is usually sweetened, so adjust the sugar in the recipe accordingly. Yogurt or buttermilk can be substituted for the milk.

PREPARATION TIME: 10 minutes    No Cooking     SERVES: 4

1 large fresh mango, peeled, seeded, and diced, or 1 cup canned mango pulp

3-4 Tbsp. sugar

¼ tsp. ground cardamom

3 cups chilled low fat or skim milk

 

In a blender, combine the mango, sugar, cardamom, and 1 cup of the milk. Blend for 2 to 3 minutes, until pureed. Add the remaining milk and blend for another minute. Serve in a glass over ice.
