Rice Pilaf with Peas and Green Beans:

The special aromatic basmati rice makes this a delicious mild pilaf. If you cannot find basmati, use extra-long-grain rice instead.

Rice Pilaf with Peas and Green Beans

PREPARATION TIME: 15 minutes    COOKING TIME: 45 minutes     SERVES: 4

2 cups basmati rice

3 onions, peeled and thinly sliced

1/2 cup fresh or frozen peas, cooked

2 (1-inch) cinnamon sticks

1 (10 oz.) package frozen French-style green beans

2 whole cloves

2 Tbsp. light vegetable oil

1/4 tsp. salt

2 Tbsp. chopped fresh cilantro

 

1. Begin cooking the rice using your favorite method. Set aside.

2. Meanwhile, in a small saucepan, boil enough water to cover the peas and green beans, and cook for 8 to 10 minutes, until they are tender but firm. Drain.

3. In a heavy-bottomed nonstick skillet, heat the oil. Add the onions and sauté for 3 minutes, until the onions are soft. Add the cinnamon sticks and cloves, and sauté for 2 minutes. Add the cooked vegetables, rice, and salt, and mix well. Simmer over low heat for a few minutes to blend the flavors.

4. Garnish with the cilantro and serve warm.
